The wild, wild world of David Grutman, the secret king of Miami

To say David Grutman is “larger than life” would be fitting, but after stepping into his world over the past year on a handful of visits to his gold-plated, bottle-popping playground, Miami , Florida, “larger than life” just doesn’t seem to cut it. The club impresario, hotelier and entrepreneur has some serious orbit in the city’s nightclub scene.

Take, for example, the morning of 21 January. Grutman has been awake since 5am. We convene at 8am on a private Sunset Island tennis court, where he rallies with tennis legends Jimmy and Nick Bollettieri, the latter of who is the spry 89-year-old mastermind behind the on-court careers of Andre Agassi, Maria Sharapova and Jimmy Arias. An hour later, we throw our rackets into the trunk of his Bentley Mulsanne and zoom through the Miami streets where, to Grutman, red lights are more of a suggestion. If he’s not driving the Mulsanne, he takes a recently acquired Lincoln Continental Mark V Givenchy Edition for a spin. We stop for an iced coffee, which is consumed in no less than two minutes, and in the blink of an eye arrive at his apartment, located inside the Zaha Hadid-designed One Thousand Museum building. We enjoy a healthy keto pancake and green juice breakfast while Grutman fields text messages and phone calls and FaceTimes and DMs from friends, business partners and his more than 737,000 Instagram followers. They have last names such as Kardashian, Beckham and Brady.

So, just who does Dave Grutman think he is? Unheard of in the UK, in the US he’s a bona fide firebrand. For Miami residents and revellers alike, Grutman is the mayor – just don’t call him that. He’s got the real mayor on speed dial. Instead, Grutman is, on paper, the founder of Groot Hospitality, which is responsible for two mega clubs and five restaurants in Miami. It may sound like small potatoes, but in October 2019 51 per cent of Groot Hospitality was acquired by Live Nation at a then valuation of $50 million, as it is, indeed, a proven formula of bottles, models and no-holds-barred excess. An average Saturday night at trophy property LIV Nightclub, located inside the Fontainebleau Hotel, could expect to host more than 2,500 guests, some of who shell out more than $100,000 for a table reservation in the coveted, always crowded section of the club affectionately referred to as “The Cluster”, where athletes rub shoulders with their significant others and reality stars pop bottles of champagne, starting at $375 a bottle, alongside Oscar winners. In the end, everyone, no matter which social strata they may fall into, is in search of a good time and when he decides to stay up late Grutman can be found at the epicentre of it all. So far, so Miami, right? 

Those who make the Grutman machine tick swirl around us as we sit at the kitchen table. His is a life of immense, unapologetic privilege. There is his wife, designer and influencer Isabela Grutman, and two daughters Kaia and Vida – accompanied by their respective nannies, naturally. There is Max Pallot, a personal assistant who handles everything from private jet bookings to Wimbledon to fetching that little spoon used to garnish a salad with grated parmesan cheese. There’s also personal trainer Anthony Rhoades and a rotation of vegetable-forward chefs, who hold Grutman to his newfound path of health and wellness. Within the past year he’s lost some 30 pounds, though he still manages to frequent the decadent eateries and watering holes he owns and operates. Rather than gold-flecked sushi rolls or an ice-cream sundae garnished with a sparkler, he opts for low-carb dishes with a side of sparkling water. After all, rather than eat, he’s there more so to be seen.  

Looking back on his 25-year career, his rise has not been meteoritic, but rather a slow and methodical climb to the top, through which he’s amassed a Rolodex that runs impossibly deep. This includes Kim Kardashian , who first intersected with Grutman in 2001 when she served as an assistant and closet organiser to Paris Hilton. Together, Kardashian and Grutman have run a parallel path to notoriety, founded on their unabashed pursuit for just that, raking in hundreds of millions of dollars along the way. “[David] just gets me and vice versa,” Kardashian tells GQ . “There are friends that come into your life and just enhance it, because they understand who you are and what your goals are. To see each other make it to where we have and reach those goals, that’s what true friendship is.”

And like a true confidante, Kardashian arrived on 15 April via private plane to celebrate the grand opening of The Goodtime, the first hotel within the Groot Hospitality portfolio, cofounded with Pharrell Williams and located in Miami’s “South Of Fifth” neighbourhood. The celebration, which unfolded poolside and later at LIV until the wee hours, drew a crowd of 1,500 guests eager to get a first look at the Ken Fulk-designed interiors, a first taste of the Purple Reign cocktail and a first dance of the (almost) post-Covid era. In all, it’s another obsessively executed playland meant to set the stage for high-consumption merrymaking.

“It’s a poetic trade off, because I’m a musician and he’s a curator, more so than just a hospitality guy, so we both end up producing,” Pharrell tells GQ of working with Grutman. The two also cofounded Swan, a pastel-hued eatery in the Miami Design District. “I produce the sound in a room, he produces the energy that’s in the room and, for him, everything needs to be perfect – the food, the ambience, the style – and that’s what I do with music. Think of it like Disney World: every single thing, every piece of square footage has a team that plans it out to give you that wow factor. That’s what David is like with his places.” 

This sort of high-octane atmosphere is old hat for him, though. He’s been at it since 1996, when he began his first job in hospitality as a bartender for Biz Bistro in Aventura, a sleepy corner of Miami known more for its retirement community than its food and drink. “I wanted to be like Tom Cruise in Cocktail and what I really wanted was to work at this place called Bash,” Grutman explains. “That place was it. It was everything to me.” Operated at the time by Eric Omores, a once revered figure in the Miami nightlife scene and later a founding partner of Nikki Beach Global, Grutman became obsessive in his pursuit to join his ranks. “I didn’t only want to work at Bash,” he says, “I wanted to be like Eric. At the time, he had the best network in the world. Everything he touched became these cool, unique, aspirational high-end places that were powerfully magnetic, so I did everything I could to try to get this job. I expanded and worked my network like never before. I had friends of friends call him. I had girls call him. I found out everyone he was connected with and had them call him.”

In the end, he didn’t get the job, nor did he ever hear back from anyone after the interview. “I took it personally, but I walked away with a lesson,” he says. “South Beach bars and clubs don’t want short, chubby Jewish guys working any job. They want tall, beautiful women. They want models.” So there he found himself, slinging cocktails to retirees in Aventura, while simultaneously wanting for more as he studied the playbooks of the larger, sexier operations around him. This led to the founding of Miami Marketing Group in 2008, an experiential events meets public relations operation that put his studies to work, earning him a role as an operating partner in LIV. Later that same year, the club played host to the Victoria’s Secret Fashion Show afterparty, during the lingerie brand’s celebrity-fuelled heyday, thus igniting a decade-long onslaught of bold-faced names befriending Grutman and frequenting his properties. 

But they have not been without their foibles, particularly within the past year as Miami became a global flashpoint for controversy. Footage of those seeking to flout Covid guidelines were broadcast to the world and its ringleader, Grutman, quickly became a reluctant spokesperson for the city despite his operations remaining closed. “We’re going to open it when we can give the right experience,” he told Associated Press in October 2020, just as citywide bans on dining and nightlife began to lift. “I’m not into giving half-ass experiences.”

Through it all, he has emerged as a mascot of sorts for the city, often acting as the welcoming committee for Miami newcomers such as Victoria and David Beckham, whose Inter Miami football club recently kicked off its inaugural season at a glistening new 18,000-seat stadium. Beckham, Grutman and NFL quarterback champ Tom Brady were recently seen on a Florida beach together this summer, showing off abs, comparing short bathing shorts and playing catch with an American football. Seems like there might be a spot for Beckham in Brady's new team, the Tampa Bay Buccaneers, yet...

Now, Grutman is ready to set his sights beyond Miami, with new projects slated to debut this year in Dallas, Las Vegas and even further afield, in Qatar. There’s even talk of coming to the UK. “Miami will always be home for me, but my team and I don’t stop,” Grutman says as we stand looking out over Biscayne Bay, enjoying his third or fourth coffee of the day. He gestures toward the South Beach skyline, his gold watch glistening in the sunlight. “We don’t want to just create the best experiences right here, we want to take over the world.”

A Day in the Life of David Grutman: Miami Entrepreneur

For David Grutman, mornings are sacred. This is not because he’s necessarily a morning person (if anything, he’s an all-hours kind of guy). Nor is it because he’s a sit-and-savor-his-coffee-while-reading-the-paper type (he slams espresso shots and absorbs his news through Twitter). Rather, mornings are the sole time of day in which his core industry has, essentially, gone to bed: Grutman is the founder of Groot Hospitality, the renowned Miami Beach-based group behind some of the world’s most successful nightclubs and restaurants, including the ultra-hotspot LIV at the Fontainebleau, and Komodo, the highest-grossing independent restaurant in the country in 2021. Mornings are his ostensible midnights. But this doesn’t mean Grutman is lounging. In fact, 99% of the time, he’s playing tennis.

“I try to get out here every day of the week. I’m obsessed,” says Grutman, standing on the baseline of a private court in Miami Beach’s Sunset Islands, where he practices. He calls it the “Terrordome,” and it has just been upgraded with Prince-branded windscreens. (In addition to his hospitality work, Grutman is also the co-owner and creative director of the celebrated athletics brand.) “It helps me clear my head for the rest of the day and night, and I like that it’s a form of exercise that has a certain level of competition.” Even at casual 8am sessions, he tends to go big: Grutman brings high-profile guests such as tour players Genie Bouchard and Reilly Opelka, and regularly hits with the famed coach Jimmy Bollettieri. At his vacation home at Amanyara in Turks and Caicos, Grutman is known to book all the pros, both courts, and invite people to train with him. When he hits an especially good shot — most often on the forehand side — he says, “Buh-bye.”

Post-tennis, Grutman usually heads home to settle into an afternoon of calls, networking, and, frankly, helping people who want to experience Miami in as full and as fun a manner as possible. This includes visitors and locals alike. When I arrive at his apartment at 1000 Museum — the striking, exoskeleton-wrapped tower designed by the late Zaha Hadid and considered to be the most luxurious building in the city — he’s coordinating a private dining booking for his friend, the musician DJ Khaled.

“I probably speak to about 200 people a day on the phone,” says Grutman from his living room table, which offers a 180-degree view of Biscayne Bay, celeb-studded Palm, Star, and Hibiscus Islands, and Miami Beach beyond them. “I still truly enjoy it. I like connecting people. I like talking to people. And it’s not below me to help people book a table, or get them in when the restaurants are packed. It’s what keeps me motivated in this business. I genuinely want people to have a good time, and I like being able to make that happen.”

Grutman’s apartment features an open floor plan, with curved balconies that give it a kind of light-filled sky cave feel (Hadid’s building is extraordinary — it’s clad in a concrete-fiberglass trim, no two pieces of which are the same, and all of which had to be forged one by one in Dubai before being shipped to Miami). The table acts as a kind of juncture between the modern kitchen and his art-filled sitting room. Grutman has an eye for Pop art, and collects pieces that are bright, vivid, and optimistic. He’s also started to acquire a few NFTs, some of which are displayed on a rotating basis on a recently installed LED screen.

The table is also often the display console for a number of companies in which Grutman is invested, or at least interested. When I visit, there are boxes of Goodles, the healthy boxed macaroni-and-cheese company founded by the actress Gal Gadot. Grutman has a stake in it. Some collegiate-inspired sample Prince shirts hang on the back of a chair. There’s also a bottle of 818 Reserve, which is from Kendall Jenner’s tequila brand (he’s close friends with the Kardashian-Jenner crew), and a box carrying boots designed by Victoria Beckham, who happens to have a residence in this same building. These shoes have been ordered by Grutman’s wife, the Brazilian model, designer, and philanthropist Isabela Rangel Grutman. The two tied the knot in 2016, after Grutman proposed the year before beneath the famed outdoor murals of Miami’s Wynwood district. Their wedding occurred in the same neighborhood — a star-studded event that many still talk about. The Grutmans now have two daughters, Kaia and Vida.

Back to business: success in hospitality has allowed Grutman to fund and partner with brands outside of the space, yet there always seems to be a tie back to people-pleasing. When I ask him about what draws him to an investment opportunity, he says, “I’m interested in ideas that serve popular, everyday needs. Things like apps, social media, wellness, food and beverage start-ups, and consumer goods.”

After a few more calls and a quick lunch of açai bowls and more espresso, we hop in Grutman’s elegant Bentley Mulsanne. As we drive east across the bay, he fondly brings up his old boat, called Groot, for which he even had merchandise made over the years (including T-shirts designed by Virgil Abloh). That swag is a hot commodity in Miami these days, if you can get your hands on it. While the boat has been sold, a new one is under construction.

We’re traversing the MacArthur Causeway to get to the the Goodtime Hotel. On a typical day, Grutman may or may not visit one of his venues until nighttime — but today he’s en route to the Goodtime for a content shoot.

The Goodtime is Groot Hospitality’s first hotel property. It opened in 2021 in partnership with the multi-hyphenate talent Pharrell Williams. Williams is also a partner on a Groot restaurant called Swan, in the Miami Design District, and in 2024 Grutman and Williams will jointly debut a resort named Somewhere Else on Atlantis Paradise Island in the Bahamas. Do not be surprised to see their joint ventures expand to other cities and regions in the near future.

From the hotel’s pink, gold, and wicker-accented library, Grutman scans the clearing as a waiter brings me a spicy Jaja margarita and him a green juice. “I mean, look at this,” he says. “It’s the best. It really shows what we try to do with all of our spaces. Not only great food and great drinks, but also world-class entertainment and eye-catching decor. We want our experiences to be high impact — and we want them to be shareable.” A few minutes later, I count at least two people taking selfies, no doubt destined for Instagram stories.

Groot Hospitality’s restaurant roster is expanding substantially. In addition to those aforementioned, there’s also Papi Steak, a high-energy intimate steakhouse in Miami Beach’s tony South of Fifth neighborhood; Strawberry Moon, a Mediterranean restaurant located at the Goodtime Hotel; Gekkō, a high-end Japanese-inspired steakhouse opened in partnership with the recording artist Bad Bunny located in Brickell; and the Key Club, a clean and contemporary take on an all-American bistro, nestled in Coconut Grove. Komodo will soon open its second iteration in Dallas; many more restaurants, overall, will follow in the coming years. One compelling point to consider here is that Groot is owned in part by Live Nation, the entertainment company that — shrewdly — sees the value of aligning talent with hospitality as a major pull for patrons. Grutman, however, noticed this long ago.

It’s now twilight — about 7pm, a few hours after wrapping at the Goodtime — and we’re sitting in a booth at the Key Club, surrounded by wood-paneled walls and a colorful, uplit mural. I ask Grutman about the seemingly ever-increasing confluence of hospitality and entertainment — of the supercharge that celebrity can add to a space. “I first saw the power of it years ago,” he says. “This was the era of pre-social media. By a long shot. And you know who it was that made me see the potential? Janet Jackson. Of course, celebrities in nightclubs have always been a thing. Ian Schrager and Studio 54? Legends. But this felt different. The way people approached Janet, asking for pictures on their phones, obtaining a portable memory from a moment. I thought, ‘This is just the beginning.’”

Good times with famous friends

The sentiment underscores what Grutman told me back at the Goodtime: he’s not engineering an outing based on one pillar. It’s more that he excels at creating a world within a world. Through this, he strives to make everyone in the room feel as important as the next, and, in doing so, imparts a bit of Magic City electricity through all of it — food, drink, sights, sounds, proximity to fame, and, mostly, purpose of fun.

“I can’t turn it off,” he says. “It’s the natural host in me. I’m OK with the late hours. I want to make sure people are taken care of. It makes me happy when my guests are happy.” With that, he gets up, and heads out into a night still young.

The 35 year old talk show host was spotted hanging out on a yacht with nightlife entrepreneur David Grutman and his wife, model Isabela Rangel.

The comedian spent the weekend performing stand-up comedy at Ft. Lauderdale and St. Augustine, Florida before his boat excursion.

Noah will be hitting the road on a stand-up comedy tour for most of this year, performing on weekends between his day job at The Daily Show.

He has shows next weekend on March 22 and 23 in Greenville, South Carolina and Charleston, South Carolina.

His next show after that is in Amherst, Massachusetts on April 12.

While aboard David Grutman’s yacht in Miami on Thursday, Kim Kardashian West’s 2-year-old quickly recognized Kanye West’s voice when his song “Can’t Tell Me Nothing” came on.

“Who’s singing this?” Kardashian West, 37, asked Saint on her Instagram story.

Saint, who wore a sailor’s hat for the outing, then responded, “Daddy,” without any hesitation as Kardashian West continued to rap the lyrics.

Shortly after, Kardashian West posted another clip of herself listening to “Homecoming” by West, but this time with her elder daughter North, 5.

In addition to the sweet moments with her children, the Keeping Up With the Kardashians star showed off her curves in a skintight pink Chanel bodysuit.

It appears the moment-by-moment documentation was due to her needing to kill time on the boat.

Kardashian West later revealed she, her kids, and friends Jonathan Cheban and Larsa Pippen were stuck on one side of the Miami river due to a crash involving a photographer.

“Finally the bridge would open because the paparazzi crashed a car and they wouldn’t let the bridge open and made us wait for literally 40 minutes,” Kardashian West said while filming the The Brickell drawbridge rise.

Recently, Kardashian West has been enjoying time off from work.

Before jetting off to Miami, she and her kids took a trip to the Bahamas.

There's no joke here, but that's exactly what went down in Sardinia over the weekend ... with Tom Brady and Leonardo DiCaprio hanging out on a big boat together.

Tech tycoon Mike Lynch , one of seven to die in the Bayesian yacht tragedy, was planning to investigate the Lucy Letby trial, according to his MP friend.

Conservative politician David Davis said Mr Lynch wanted to establish ‘a UK equivalent to the Innocent Project’, a US charity that helps exonerate people who they believe have suffered miscarriages of justice.

The 59-year-old, whose body was recovered from the wreck in Sicily on Thursday, had been particularly interested in the Letby case.

Last year, former neonatal nurse Letby received a whole life prison sentence for the murder of seven babies and the attempted murder of another seven.

Writing in The Times , Mr Davis, said: ‘Mike was a world-class expert on probability theory, and saw straight through the statistical weaknesses that underpinned the Letby prosecution.

The MP for Goole and Pocklington was going to be involved in the Mr Lynch’s new organisation and said one of their first projects was to focus on the Letby trial.

The pair had been due to meet on Thursday (August 22) to discuss the plans.

‘But on Monday, just as I was planning to send him a text to confirm the lunch, devastating news was breaking about his superyacht sinking during stormy weather near Palermo in Italy,’ he explained.

In June this year Mr Lynch was cleared of fraud charges he faced in the US over the $11bn (£8.6bn) sale of his software firm to Hewlett-Packard in 2011.

He had been accused of inflating the value of his company, Autonomy, ahead of its sale, but was found not guilty by a jury in San Francisco.

He could have faced more than 20 years in jail if convicted.

Mr Davis said: ‘Mike’s tragic death is a stark reminder of the human cost of legal systems that, while designed to uphold justice, can themselves become instruments of profound injustice.’

He described Mr Lynch’s passing as a ‘dreadful personal tragedy’ for his family and friends but also a ‘huge loss’ for society as a whole.

The tech mogul started Autonomy, a software used by organisations to analyse huge swathes of data, in 1996.

The firm became successful quickly, and soon joined the FTSE 100 list of top companies based in the UK.

Mr Davis had lunch with his friend after the acquittal to celebrate the victory.

He said Mr Lynch spoke of the ‘Saint Peter questions’ – which is what you would say when Saint Peter asks you at the pearly gates, ‘How well have you spent your life?’

His plan was to use the remainder of his life to ensure he had a good answer for that, Mr Davis explained, and the exoneration project was all part of this.

The £15m Bayesian superyacht sank near Porticello at around 5am local time on Monday after being hit by a storm.

The body of Canadian-Antiguan national Recaldo Thomas, who was working as a chef on the yacht, was recovered at the scene on the same day.

The bodies of Mr Lynch, his 18-year-old daughter Hannah , Morgan Stanley International bank chairman Jonathan Bloomer, his wife Judy Bloomer, Clifford Chance lawyer Chris Morvillo and his wife Neda Morvillo were later recovered from the wreckage.

Fifteen people, including Mr Lynch’s wife Angela Bacares, 57, were rescued from a life raft shortly after the sinking.

Former cabinet minister Sir David Davis has said that Mike Lynch , the tech mogul who died when his yacht sank off the coast of Sicily last week , was planning to examine the murder conviction of nurse Lucy Letby over concerns about its safety.

Sir David, the former Brexit secretary, has previously told The Independent he plans to spearhead an investigation questioning the conviction of Letby after a number of experts cast doubt over her guilt.

Sir David said he hopes to visit  Letby  in prison as part of an investigation into whether the serial baby killer may be the victim of a miscarriage of justice . Letby is serving  15 whole-life sentences  for seven murders and eight attempted murders of babies in her care at the Countess of Chester Hospital between 2015 and 2016.

Writing in The Sunday Times , Sir David said that Mr Lynch, who was one of seven people to have died in the yachting tragedy, shared his concerns about Letby’s conviction.

“[Mike Lynch] planned to establish a UK equivalent to the Innocence Project, a [US] non-profit organisation that works to exonerate those who have suffered miscarriages of justice. He raised the case of the Lucy Letby trial as one that had already caught his attention,” Sir David wrote.

“Mike was a world-class expert on probability theory, and saw straight through the statistical weaknesses that underpinned the Letby prosecution. One of our first projects was going to be investigating that trial properly.

“We were due to meet on Thursday, 22 August, to discuss the plans. But on Monday, just as I was planning to send him a text to confirm the lunch, devastating news was breaking about his superyacht sinking during stormy weather near Palermo in Italy.”

Letby is serving 15 whole-life sentences for seven murders and eight attempted murders of babies

Sir David said Mr Lynch wanted to investigate potential miscarriages of justice after his own experience fighting a fraud case brought against him in America.

Several medical professionals have raised questions over Letby’s conviction. In one podcast, the statistician Peter Elston and retired paediatrician Michael McConville claimed there had been inadequacies in the medical evidence presented during her trial.

Letby continues to maintain her innocence despite her conviction and told jurors during her trial she was “not the sort of person who would kill babies”.

It comes as a manslaughter investigation has now been launched by Italian prosecutors into the sinking of Mr Lynch’s Bayesian superyacht near Porticello at about 5am local time on Monday.

The yacht had been hit by a downburst. These are powerful winds that descend from a thunderstorm and spread out quickly once they hit the ground.

Mr Lynch’s 18-year-old daughter Hannah, Morgan Stanley International bank chairman Jonathan Bloomer, his wife Judy Bloomer, Clifford Chance lawyer Chris Morvillo and his wife Neda Morvillo were also recovered from the wreckage.

The boat trip was in celebration of Mr Lynch’s acquittal in the fraud case.

The businessman, who founded software giant Autonomy in 1996, was cleared in June of carrying out a massive fraud relating to its $11bn (£8.64bn) sale to US company Hewlett-Packard.

Founded in 2003

Timmerman Yachts is a Russian builder of quality luxury motor yachts. Based in Moscow, it is owned by a group of Dutch and Russian investors and operates out of Moscow Shipyard. Several noted naval architecture and yacht design firms are involved with Timmerman, including Vripack, Guido de Groot Design, Ginton Naval Architects, Jon Bannenberg Ltd., and Francis Design Ltd.

Founded in 2003, the company was named for 17th century Dutch boat builder Franz Timmerman who brought Dutch boat manufacturing techniques to Russia and co-founded the Russian navy. Timmerman Yachts has more than 1,000 employees working at the Moscow Shipyard.

Timmerman has delivered a number of semi-custom luxury yachts between 26-47 metres in length, including TM26 and Timmerman FD-51, designed by Francis Design Ltd. Other notable Timmerman yachts include Victoria M, Alexandra (now Latitude) and Olsten 125′.

One of the 10 largest yacht builders in the world, Timmerman is focused on building high-quality luxury yachts at more competitive prices. Its Russian-Dutch partnership provides great yacht-building capabilities. Timmerman builds yacht to the highest standards and holds DNV, MCA and Russian River Register certification. The company reportedly has more than a dozen yachts in some phase of construction.
